East Indian Speciality Cook

Skill Requirements
Seeking a cook having minimum 3 years of East Indian cuisine experience, with sound knowledge of all types of food preparations, recipes. The mind set must be towards commercial food preparation. Hindi speaking is a must.
General Duties
Prepare food for catering orders of weddings, receptions and business events. Ability to cook full course East Indian delicacies, such as naan-kebab, (cubes of meat), chicken tikka (pieces of specially prepared chicken legs cooked in the tandoor), machli (fish), other seafood delicacies (seasoned sabzi vegetables), aloo (potatoes), gobhi (cabbage), bhindi (okra), channa (chick peas), and mutter (peas), dhal (a stew made with lentils). Attention must be paid to the right amount of cooking time, to avoid hardening of the meat, lentils, and other dishes. Prepare and cook snacks such as Samosas (veg/non-veg) & all varieties of East Indian sweets.
The Cook needs to have a clear understanding of the spices and recipes involved in preparing a variety of traditional Indian dishes. Ease with the use of knives and other kitchen equipment is essential. Preparing of dough for the tandoori bread (clay / tandoor oven-baked with exact attention to dough rising times)
